Passion for the masala
Indian food has a reputation. Lots of rice, lots of herbs, naan bread and most importantly: hot chilies. But with some raita, a cucumber-yogurt mixture to put out, it's all very easy. So don't hesitate and order the traditional tikka masala or chicken tandoori. Because the real one does not come from a pack of 'world dishes', but from northern India.
Of all Indian dishes, curry is the most famous. But India has much more: chutney, dhal, papadum's, paneer, the list of spicy dishes is endless. Moreover, India is a true valhalla for vegetarians. Hinduism has been the greatest religion here for many centuries. And so there has also been many centuries of experimenting with vegetarian dishes. Which are so delicious nowadays that even non-vegetarians should not miss them.
Also important, one curry is not the other. Because masala is not a standard mixture, but a spice mix that can change in composition. On the spice plantations in Thekaddy you can see where all these herbs come from. For more than a thousand years, Thekaddy has been the spice capital of India. Ginger, cardamom, pepper, cinnamon, vanilla and garlic. The average Indian dish easily reaches 20, when it comes to spices.
