Last June, the international world of gastronomy gathered in atmospheric Turin for the announcement of The World’s 50 Best Restaurants 2025. 1. Maido – Lima

Restaurant Maido draws its inspiration from the rich ingredients and traditions of the vast Peruvian Amazon. The tasting menu has more than ten courses and features sophisticated dishes that bring together different flavors and cultures. There is also an a la carte menu full of seasonal produce and daily fresh catch. In 2024, Maido celebrated its 15th anniversary with the Maido Experience menu, which paid tribute to past, present and future.

2. Asador Etxebarri – Atxondo

To experience chef Bittor Arguinzoniz’s culinary masterpieces, foodies from around the world travel to restaurant Asador Etxebarri in the quiet Basque village of Axpe, surrounded by mountains and lush greenery somewhere between Bilbao and San Sebastian. A small kitchen, replete with custom-made grills, prepares an array of elegant dishes where everything on the menu is grilled and the main ingredient of each dish always takes center stage.

3. Quintonil – Mexico City

Quintonil represents the groundbreaking Mexican cuisine of chef Jorge Vallejo and the warm hospitality of his wife Alejandra Flores. With fresh, local ingredients and traditional flavors in modern preparations, the restaurant is quickly growing into a classic. Quintonil is named after a green herb that appears in some dishes and drinks and provides a unique creative signature on the plate. The tasting menu features seasonal dishes and many ingredients travel just thirty feet from the urban garden to the plate.

4. Diverxo – Madrid

Passionate, creative and unpredictable. Those words perfectly describe chef Dabiz Muñoz and his Madrid restaurant DiverXO. Here, gastronomy goes beyond the ordinary and takes you on a unique journey of taste. The tasting menu is an enchanting journey through many courses full of theater and surprising combinations with strong Asian influences. Each taste stimulus sets your senses on edge and provides an experience you won’t soon forget.

5. Alchemist – Copenhagen

Alchemist is located on Refshaleøen, a raw, remote place in Copenhagen with old industrial buildings and a famous shipyard. When you walk through the huge heavy two-ton bronze doors, you enter the mysterious world of Alchemist. Let the adventure begin! Fifty “impressions” are presented here, divided into different “acts. You will travel through various locations and art forms and experience masterful craftsmanship during a seven-hour multisensory experience.

6. Gaggan – Bangkok

Going to extremes, the chef aims to create a “culinary adventure for the senses and a roller coaster of emotions. Music, colors and creativity come together in progressive Indian cuisine with influences from France, Thailand and Japan. From emojis representing each course to dishes that invite you to taste and enjoy in surprising ways. Chef Anand turns traditional fine dining all the way around. The best view in the restaurant? From the chef’s counter with only 14 seats, where you get a close-up view of the whole spectacle.

7. Sézanne – Tokyo

Dining at Sézanne means experiencing the ultimate level of culinary sophistication. The restaurant opened in July 2021 on the seventh floor of the Four Seasons Hotel Tokyo in Marunouchi, under the direction of British chef Daniel Calvert. Immediately it impressed with an immersive neo-French style, enriched with tributes to the rich culinary traditions of Asia. It is the resulting unique combinations that give his style that special signature.

8. Table By Bruno Verjus – Paris

Bruno Verjus has a colorful past as a medical student, entrepreneur, photographer and critic. His motto is“Our food choices shape our world.” Table has an undulating bar and an open kitchen where you can watch every moment of the preparation. The menu changes daily and focuses on seasonal produce and surprising combinations. The warm, approachable atmosphere and passionate team ensured that Table immediately reached the top ten of The World’s 50 Best Restaurants in 2023 and retained that spot in 2024 and 2025.

9. Kjolle – Lima

Pía León gained international acclaim as co-owner and chef of restaurant Central, which received the highest possible title and was named The World’s Best Restaurant in 2023. In 2018, she consciously chose her own culinary path. Kjolle is her first solo project, focusing on the richness of Peruvian biodiversity and giving free rein to her intuition. The kitchen is all about preserving pure flavors. Each dish is the result of intensive research and creative experimentation, but the ingredients always remain recognizable and pure. Together with her team, León continually seeks ways to make the most of every part of an ingredient, with minimal waste and maximum flavor.

10. Don Julio – Buenos Aires

Don Julio is a family business, a tribute to the flavors and terroirs of Argentina and a temple of regenerative agriculture. Almost everything on the menu comes from its own farm just outside Buenos Aires. The open grill in the heart of the restaurant, the message-filled wine bottles on the walls and the intimate atmosphere make Don Julio a beloved spot. For the full experience, also visit the wine cellar with 60,000 bottles from all corners of Argentina, the in-house butcher shop and the biodynamic vegetable garden in the nearby plaza.
